March 5, 2009: Imagine a Cinnamon Sugar muffin, topped with philly cream cheese and cinnamon sugar peanuts...we did and thought the idea was so good we made some.
We loved them so much we decided to share the recipe with you. Below is the recipe for these yummy mufins so you too can enjoy them.
Cinnamon Sugar Peanut MuffinsIngredients:
1 tablespoon Cinnamon
3 Eggs
1 Cup Butter, softened
1 Cup Castor Sugar
½ Cup Milk
1 ½ Cups SR Flour
½ Cup Peanut Van Cinnamon Sugar Peanuts
Topping:
1 250g tub Philly Cheese
80g butter, softened
½ cup Icing Sugar
Cinnamon Sugar
Peanut Van Cinnamon Sugar Peanuts to decorate
Method:
Preheat the oven to 160ºc. Line a 12 cupcake/muffin pan with papers. In a bowl, lightly beat the eggs, add butter and sugar, then mix until light and fluffy.
Add milk, flour and cinnamon, and stir to combine. Beat with an electric mixer for 2 minutes, until light and creamy. Add The Peanut Van Cinnamon Sugar Peanuts and stir through mixture.
Divide mixture evenly between the cake papers. Bake for 20 mins until risen and firm to touch. Allow to cool for a few minutes, then turn out on wire rack. Allow to cool completely before icing.
Topping: Beat softened Philly cheese, butter and icing sugar together. Spoon topping onto muffins and sprinkle with cinnamon sugar and decorate with The Peanut Van Cinnamon Sugar Peanuts.
