Mmm...Cinnamon and Sugar

March 5, 2009: Imagine a Cinnamon Sugar muffin, topped with philly cream cheese and cinnamon sugar peanuts...we did and thought the idea was so good we made some.
We loved them so much we decided to share the recipe with you. Below is the recipe for these yummy mufins so you too can enjoy them.

Cinnamon Sugar Peanut Muffins

Ingredients:

1 tablespoon Cinnamon
3 Eggs
1 Cup Butter, softened
1 Cup Castor Sugar
½ Cup Milk
1 ½ Cups SR Flour
½ Cup Peanut Van Cinnamon Sugar Peanuts

Topping:
1 250g tub Philly Cheese
80g butter, softened
½ cup Icing Sugar
Cinnamon Sugar
Peanut Van Cinnamon Sugar Peanuts to decorate


Method:
Preheat the oven to 160ºc. Line a 12 cupcake/muffin pan with papers. In a bowl, lightly beat the eggs, add butter and sugar, then mix until light and fluffy.
Add milk, flour and cinnamon, and stir to combine. Beat with an electric mixer for 2 minutes, until light and creamy. Add The Peanut Van Cinnamon Sugar Peanuts and stir through mixture.
Divide mixture evenly between the cake papers. Bake for 20 mins until risen and firm to touch. Allow to cool for a few minutes, then turn out on wire rack. Allow to cool completely before icing.

Topping: Beat softened Philly cheese, butter and icing sugar together. Spoon topping onto muffins and sprinkle with cinnamon sugar and decorate with The Peanut Van Cinnamon Sugar Peanuts.

New Product for Health Nuts

Feb 13, 2009: The cook has been at is again and has just advised us that an unsalted version of mixed nuts is now available.

If you have loved our mixed nuts in the past (they are absolutely scrumious) and are now looking for a healthier option, fear not, for you can have the best unsalted mixed nuts on the planet!

Order Forms will be updated in time but for the moment, simply mark the size of mixed nuts you would like and write UNSALTED beside it. For those ordering online, write UNSALTED MIXED NUTS, in the message area (until the order page is updated that is). Price for the unsalted is the same as our standard mixed nuts.

Lunchbox delights!

January 27, 2009: With children back to school, we thought we would share one of our yummy recipes which is ideal for those lunchboxes.

Ingredients:
6 ounces (about 180 gm) biscuit pastry
2 eggs (separated)
1 ounce (about 30 gm) melted butter or substitute
3/4 cup of sugar
1 tablespoon of plum or a berry jam
1 cup coconut
1/2 pound (about 225 gm) raw peanuts (from the Peanut Van of course)
1 cup corn cereal flakes

Method:
Roll or press the biscuit pastry out thinly to cover the base of a lightly greased lamington tin (about 7" x 11", or 18 cm x 28 cm), and put this in the refrigerator to chill while you prepare the filling
Beat the egg yolks well, then add the sugar, melted butter and jam
Beat a few minutes more, then mix in the coconut and peanuts
Beat the egg whites until stiff and fold them into the mixture with the corn cereal flakes
Spread this mixture over the top of the pastry and bake in a moderate oven (350o F or 180o C) for about 40 to 45 minutes. Allow to cool slightly, then cut into slices.

Qld Country Life calls in

January 16, 2009: Rob & Chris spent time yesterday with Martin Volz, journalist from Queensland Country Life. Over lunch, they discussed the history of the van, our product and what lies ahead. Look out for the article in an upcoming edition of the publication.

Thank you to a Kingaroy Legend

January 15, 2009: Australian Cricketer and Kingaroy legend, Matt Hayden, has decided to retire from international cricket. You may remember that Matt opened our Chermside store in July 2007. Matt is a 'Roy Boy and grew up living next door to Rob & Chris Patch. The Peanut Van has always been a big supporter of Matt during his career and we wish Matt, Kellie and the family all the very best as they move on into to a new adventure.

Our heartfelt thanks to Matt for his incredible contribution to the game. You are a true legend and you have made Kingaroy so proud!
