12 cooked prunes (pitted prunes from a packet are fine!)
1/3 cup of cottage cheese
1 teaspoon of grated orange rind
2 tablespoons of chopped peanuts
Salt to taste
Mayonnaise
Chill the prunes (if you're using fresh prunes, make sure they're pitted).
Chilling makes them easier to work with
Combine the cottage cheese, orange rind, peanuts and salt
Moisten the mixture with mayonnaise and stuff it into the prunes
Serve on salad greens as an entree or party savory - easy!

simple to make and really great to eat!
You can serve it either as a centrepiece dish in a summer salad or as a side
dish.
For a side dish, just use reduced quantities of all the ingredients.
In hot weather, you can prepare this dish in advance of the meal and
then pop it into the refrigerator to keep it chilled. But to prevent
evaporation and dryness, make sure you cover the salad bowl with plastic
wrap.
