Recipe!
This recipe was submitted to
us by Lisa of Calamvale in Queensland.
It's a nifty way to make cookies using peanut butter (or peanut paste, as
we call it here in Kingaroy).
Ingredients:

0.5 cup of
butter

0.5 cup of
peanut butter/paste

1.25 cups of
brown sugar
-
1 egg
-
1 teaspoon
vanilla essence

0.75 teaspoon
salt

1.5 cups
self-raising flour
Method:

Preheat the
oven to 350o F (about 180o C)

Beat the butter,
peanut butter, brown sugar, egg, vanilla and salt together until smooth,
slowly adding the flour while beating

Roll
tablespoon-size portions into balls and press them onto a greased flat baking
sheet or tray

Place in the
oven for 10 to 15 minutes, being careful not to overcook (the cookies should
be moist and chewy rather than hard)

Store in an
airtight container (makes around 24 cookies)
Tip:
These peanut
cookies will spread out on the baking tray, so make sure you leave plenty
of room between each cookie ball. If you'd like to give them a criss-cross
crinkled effect, press the balls down with a fork - first crosswise, then
lengthwise.
