Ingredients:

1lb (about
450 gm) of minced steak

4 rashers of
bacon
-
1/2 cup of
stuffing or seasoning
-
1.5 cups of
breadcrumbs
-
1 tomato
-
1 large
onion
-
2 eggs
-
1 cup crushed,
roasted peanuts
-
1/2 cup
Worcestershire sauce
-
2 tablespoons
of peanut oil
-
1.5 teaspoons
of salt
-
A little pepper
Method:
-
Chop the bacon
and onion very finely
-
Cut the tomato
into small pieces
-
Beat the eggs,
and mix them into the meat
-
Add 1 cup of
breadcrumbs and all the remaining ingredients into the meat-egg mix (except
the peanut oil) and blend together thoroughly

When combined,
shape the mix into a loaf and coat with the rest of the breadcrumbs
-
Heat the peanut
oil in a loaf tin
-
Wrap the loaf
in aluminium foil and place it into the tin
-
Bake in a slow
oven - 325o F or about 170o C - for around 90
minutes

Serve cold
Tip:
You can serve
this meatloaf hot if you prefer. If so, hot vegetables are good accompaniments.
If served cold, this meatloaf goes very well with a garden salad.
