Peanut Meatloaf
 
Ingredients:
  • 1lb (about 450 gm) of minced steak
  • 4 rashers of bacon
  • 1/2 cup of stuffing or seasoning
  • 1.5 cups of breadcrumbs
  • 1 tomato
  • 1 large onion
  • 2 eggs
  • 1 cup crushed, roasted peanuts
  • 1/2 cup Worcestershire sauce
  • 2 tablespoons of peanut oil
  • 1.5 teaspoons of salt
  • A little pepper

Method:

  • Chop the bacon and onion very finely
  • Cut the tomato into small pieces
  • Beat the eggs, and mix them into the meat
  • Add 1 cup of breadcrumbs and all the remaining ingredients into the meat-egg mix (except the peanut oil) and blend together thoroughly
  • When combined, shape the mix into a loaf and coat with the rest of the breadcrumbs
  • Heat the peanut oil in a loaf tin
  • Wrap the loaf in aluminium foil and place it into the tin
  • Bake in a slow oven - 325o F or about 170o C - for around 90 minutes
  • Serve cold

Tip: You can serve this meatloaf hot if you prefer. If so, hot vegetables are good accompaniments. If served cold, this meatloaf goes very well with a garden salad.
