2 cups of raw shelled peanuts (leave the skins on)
1/2 cup water
Dissolve the sugar in the water in a saucepan over medium heat
When the sugar is dissolved, gradually add the peanuts, stirring frequently
as you do so
Continue cooking over medium heating and stirring the mixture until the peanuts
are completely sugared (ie coated with no syrup remaining)
Pour the mixture onto an ungreased baking tray and separate the peanuts with
a fork
Bake at 300o F (about 150o C) for approximately half
an hour, stirring every 10 minutes to ensure the mix bakes evenly throughout.
Chris says: Sugar-coated peanuts are
surprisingly easy to make, and a popular family favourite in our house.
In fact, this time-tested recipe is very similar to the way we make
our own Peanut Van sugar coated peanuts!
This recipe will make about 2.5 cups of sugared peanuts. But if you
want to make more, then simply adjust the quantities upwards. And for best
results, store any unused nuts in an airtight container.
